Buying Fish


More than any other meat, how good fish tastes depends on its freshness.

When you buy one, it should look as alive as possible.

  • The eyes should be clear.
  • The flesh should be springy. If you poke it (lightly), it should bounce back into shape.
  • The gills should be bright red.
